Bite into the best of UNI Dining Services
UNI Best Bites is hot off the press—and flying off the shelves.
UNI students decorate sugar cookies and other baked items provided by UNI Dining Services.
This new 178-recipe cookbook features UNI Dining Services' most requested recipes. Perennial favorites, such as hearty Panther Chili and crunchy-good Granola, are included, as are new and highly requested recipes for decadent Champagne Truffles and spicy Chicken Enchilada Soup, among others.
"The recipes come from a variety of sources—students, faculty and staff, alumni, magazines, the Web," said Carol Fletcher, assistant director for residential dining. "I truly like all of these recipes." She is, however, partial to the Strawberry Spinach Salad. Best Bites' Lemon Tart is also a favorite since it came from her grandmother's recipe collection.
In 1992, Dining Services put together packets of cookie recipes because people enjoyed the goodies when eating on campus and wanted to make their favorites at home. Over the next several years, and because of the many requests, packets of soup, appetizer and salad recipes were created.
Instead of putting together yet another packet, Fletcher said Dining Services chose to combine all the recipes, and some new ones, into a single cookbook, which is brimming with recipes in the following categories: Appetizers, Dips & Spreads; Breads & Rolls; Salads; Soups; Main Dishes & Sides; Bars; Cookies; and Specialty Desserts.
"We printed 600 copies, and we've already sold 300," said Fletcher, who anticipates a second printing in short order—especially since the holiday gift-giving season and tumbling temperatures are upon us. (Savory Holiday Quiche is sure to warm the insides of any family member or friend.)
Best Bites can be purchased for $12.50 on campus at Biscotti's and Piazza at Redeker Center, 23rd Street in the Commons, at University Book and Supply and online at Panther Pantry. Get a copy or two and get cookin'!
