For her research, Professor Eden is interested in the history of ideas and the actions they inspire, especially in the history of science, medicine and technology. She has published three books, one on cooking in early America, one on food and identity in early America, and the third on food and Christianity around the world since the Middle Ages. She has also written several book chapters. Dr. Eden is currently researching medical charity in the United States in the twentieth century.
Professor Eden teaches courses in United States history, especially Colonial America, The American Revolution, The History of American Thought, and American History since 1877. She also teaches Material Culture, Stages of World Civilization: 1500 to the Present, Analysis of Social Issues, and Globalization.
